Chef Guy Baldwin, a culinary pioneer in Siem Reap for the past 9 years, recently introduced Baldwin’s Bistro, a vibrant restaurant blending elevated French bistro classics with bold Khmer influences. In December 2024, he expanded his vision with the launch of the exclusive VIP Room on the upper level of Baldwin’s Bistro. This intimate, high-end dining experience is centered around exceptional ingredients and expertly crafted dishes, where Chef Guy and his talented sous chef, Chef Silla, create a harmonious fusion of European finesse and Khmer flavors. Guests indulge in a meticulously curated 6-course tasting menu, with an optional wine pairing designed to elevate each bite. Chef Guy is also passionate about creating bespoke dining experiences, hosting private events where he collaborates with guests to design personalized menus based on their preferred ingredients. For an unforgettable culinary journey, reservations for the VIP Room are required 48 hours in advance, offering an unparalleled level of intimacy and creativity.
